Sweet Potato Puffs

Ingredients

mashed sweet potatoes

egg yolks, beaten
|
|
|
| 1 |
cup |
cream
|
|
|
| 1/2 |
teaspoon |
salt
|
|
|
| 2 |
|
egg whites, well beaten
|
|
|
Directions:
Preheat oven to 350 degrees F
Mix potatoes, egg yolks, cream and salt; heat in saucepan. When very hot, remove from heat.
Add egg whites; beat until light. Pile loosely on buttered platter; brush with egg white.
Heat in oven until lightly browned.
